You mostly would just listen for charge.dispute.created and then cancel the Sub based on that.
And yes, debit disputes are immediately lost as they can't be contended

What reason do sepa debit disputes have? Are they customer_initiated?
Hmm I'm not positive on that. I think that is correct but I'm not sure. To get a 100% answer on that I would recommend asking our Support team via https://support.stripe.com/contact/login as they know more about the intracacies of disputes than we do.
