Handling a DD is very different to a card payment
I love how many payment methods stripe offers, but as a platform account, surley we must have some control over which ones can be used for a given payment?
Unfortunately no there is no way to control any of this as a platform. Assuming you're using Connect + Standard accounts + Direct Charges then each connected account controls which types of PaymentMethods to offer in their own Dashboard.
Ok, so we must be able handle all payment methods at all times?
Is there a guide on how to handle direct debit payments
I'm really sorry, this is super vague and so I'm not sure how to help you. Yes we have docs for every payment methods in our docs. For example ACSS Debit for Canada https://stripe.com/docs/payments/acss-debit/accept-a-payment

Yes
We use subscription schedules... these have been live for months (maybe 10 months or more).
Come sometime in Dec (around 6th we think), suddenly reports of DD payments were being made. Prior to this, we had never seen the DD option (not in a test env or live).
Now, when we check our dev env's, all our test stripe a/c have DD enabled and the option to pay by DD is available to users
This is also happening on production and has led to a load of payments made by customers for a payment method we dont support
On checking with our clients, none of them have any knowledge of enabling DD in December
Gotcha, I'd recommend working with support directly and providing a way more detailed and clearer actionable summary with exact account ids, exact transaction examples, etc.

So its 100% no conicendence that these payment methods were forecfully turned on in early December

I am just flagging that this is where our customers must got to disable DD.. but the section suggests its for invoices to be paid manually... very confusing
not really, that is about the terms which is the Payment Due part in that picture
