I wanted to do some action -- after 15 days from when micro-deposits were sent

since microdeposit verifications have a timeout of 10 days -- I also want to send reminder email maybe.

The next_action.verify_with_microdeposits.arrival_date of Payment Intent (https://stripe.com/docs/api/payment_intents/object#payment_intent_object-next_action-verify_with_microdeposits-arrival_date) will return the arrival date of the micro-deposit

I am actually creating invoices to charge customer

how can I use payment intent in this flow ...
I create payment method -- attach it to customer -- ask them to verify -- once verified, create one off invoice to charge them
