Thanks for sharing! The amount is displayed and controlled by the Alipay. Regardless the currency that the customer pays in Alipay, the payment will be charged to 1000 HKD with Stripe, i.e. you will receive 1000 HKD
Can users actually pay 1000HKD?
Alipay is denominated in CNY, so the customer's wallet will display and charge in CNY when they are making payments in HKD.

How do we pay HKD if our client is in Hong Kong?
By setting the currency to HKD in Payment Intent, customer will pay in HKD (or equivalent denominated currency of the alternative payment method)

However, it's up to the payment method provider such as Alipay to show the currency in its own interface
Stripe has no control over it
It's not possible to change the CNY in Alipay to HKD as Alipay only accepts CNY
