what do you mean by "Stripe KYC" exactly? Stripe Identity or Stripe Connect or something else?

Its stripe connect. Our client needs to go through it in order to create stripe account and receive charges and payouts
What type of connected account are you creating? Standard, Express, or Custom?

We want to store some of that data in a secure vault. (more sensitive data like SSN/bank account) if we would like to reuse it but we don't want it to touch our servers.
Its something that we can do if we are doing the onboarding on our own. but we do want to continue using Stripe onboarding
you can use the Stripe API to retrieve info about the connected account with this endpoint: https://stripe.com/docs/api/accounts/object
then if you want to store that information somewhere else, that's up to you.
