If I want to reserve funds on a customer's account for a period longer than 7 days, can I, for example, release the previously reserved funds every 6 days and re-reserve the new funds to refresh the days limit?

technically that's possible. but every time you try to reseve the funds, the payment may get declined by the bank, for example because the customer doesn't have enough funds.

note that it's possible to hold the funds for more than 7 days. if you are interested in this, you can ask Stripe support to see if you are eligible for this: https://support.stripe.com/contact

But if I remove the previous fund reservation to make a new one, can I reserve the funds that were previously reserved?

technically yes. but you don't know what happens on their bank account, maybe at the moment where you take the hold there won't be any funds, or the card expired, or something else.

so you need to take that possibility into account.
