If you're testing Connect accounts then you shouldn't be using real/personal data, but the test data here to onboard accounts: https://stripe.com/docs/connect/testing

I noticed that express accounts on the dashboard don’t show personal information, but custom ones do, why is that?

Also when going into production I would be forced to put real data

So now way of hiding this data, is there other ways of taking a percentage of each checkout session than creating a connected account then?

No, you need to use Connect to facilitate moving funds between multiple accounts

It seems straneg to me that you'd want to hide the information of the connected accounts from the platform. Not sure why you'd want that
