Hello! Yes, you can do that as long as you're not violating any app store agreements. Typically you can only use Stripe to sell physical goods in an app, otherwise you need to use in-app purchases.
If you're selling digital subscriptions with no physical component in an app store you likely need to use in-app purchases and can't use Stripe. There are no limitations on Stripe's end for this, it comes down to what the app stores allow.

I can't comment on what other companies do or do not do.
I do see this on the front page of https://www.revenuecat.com/ but I don't know exactly what it means:
