Interesting, if the customer looked at their account would they still see the funds? Ideally I'd like it to be as if they actually paid me. Also what is the longest you can put a hold on for?

The duration is generally ~7 days but dependent on your merchant category (MCC)

It's not a Stripe specific thing, the card networks determine the max hold duration. Google should return some results for you
Gotcha, so if I put a hold on a transaction and then cancel it does Stripe take a fee? And can I do this repeatadly without raising red flags?
No fees, no. Only when you capture the payment
