If I don't pass in the account country, and then proceed to onboard via the onboarding link with say vietnam, then use a stripe test bank account, the default currency would get set to 'VND' (matching the bank), though I'm curious why in my particular situation I need to pass in a default_currency if I'm specifying the country as vietnam

Both VN and EG are not yet supported by Stripe. If you are able to create accounts in these two countries you might be using a beta feature.
