Hi, yes what you're referring to is our Auth and Capture, https://stripe.com/docs/payments/place-a-hold-on-a-payment-method where you place a hold on the payment method and then capture the amount within 7 days which does not look like it's what you're looking for. If your work takes several weeks and you're charging the end customers when the order is placed but you'd not yet paying the fulfiller until the job is done, then I would look into Separate Charges and Transfers: https://stripe.com/docs/connect/separate-charges-and-transfers. You can charge the end customer first, then after several weeks when the work is compelete, you can transfer the funds to your connected accounts to payout.

You could, or you could also choose to debit your Connected Accounts, https://stripe.com/docs/connect/account-debits for these cancellations/ refund transaction costs at the end of the month for instance.
