initially we were going with custom..but since we have to payout to bank accounts all over the world the onboarding development seemed quite harder, so we planned to use express for onboarding

note that with Stripe onboarding we can collect bank accounts for custom accounts: https://stripe.com/docs/connect/custom/hosted-onboarding#how-to-use-connect-onboarding-for-custom-accounts
but yes in general we recommend using Express since it's simpler
I think express accounts can simpoly use https://express.stripe.com/ to login to their dashboard at any time
