I believe if you're using Express/Standard accounts you don't have very much control over which information is collected - we collect the information that we believe to be necessary based on the capabilities thatyou have enabled, the country,e tc.
If you want more control over what you collect then you'd need to switch over to Custom accounts

got it so those examples I mentioned are likely all using custom accounts?
Could you also help me understand what the difference is between standard and express? from the actual onboarding flow the two types of accounts appear to be very similar

Another key difference is that if you're using Standard accounts we strongly recommend using Direct charges, whereas Express/Custom accounts would use Destination charges or Separate charges and transfers
