hi! not sure I can answer this really, I know zero about how Woocommerce integrates. We help developers directly writing thier own code here.
generally for wallet methods like that, it's expected that the customer shouldn't have to fill in all the information on your site again since it's already in their wallet, and you as the merchant get that information when they pay.
But yes, the quality of the information can differ a lot. That's the tradeoff of accepting payment in that manner(you get much better conversion since it's fast for customers to pay).
If you were writing your own integration you could probably force customers to enter their information on your site, but I would have no idea how that is done inside Woocommerce.

but stripe has developed the stripe plugin for woocommerce, right? And on the other hand, what would the code be to prevent that from happening? Just in case I find the right file to process it.
possibly, but my team works only with external developers developing bespoke payments integrations. We know nothing about plugins or platforms or third-party integrations.
and it's not as simple as just editing a code file, it's about writing and understanding a payments integration as a developer. Sorry, we can't help here
