@undone sinew that's really up to you to pick based on your own business model and what you want to do like who holds liability for refunds or negative balances, who has access to the Dashboard, etc.
I would highly recommend talking to our support team for 1:1 help instead of here as those are not really developer questions and are 99% specific to your own business needs

Yes you can use https://support.stripe.com/contact to ask your questions to them and they will guide you to the best option for your use-case
At a high level
- Standard accounts: They have access to the Dashboard, control refunds and disputes and hold liability for negative balances. With those you use Direct Charges.
- Express accounts: They have a really limited Dashboard to enter their personal information and see their Payouts (money received) but not much more. You hold all liability for refunds, disputes, negative balances. With those you use Destination Charges.
- Custom accounts: They have a no Dashboard access at all. You handle onboarding and surfacing the relevant information to them. You hold all liability for refunds, disputes, negative balances. With those you use Destination Charges.
