As for the latter questions, presentment currency is entirely defined by what currency you specify prices in. It looks like we do support ISK, so you can define prices in Icelandic Króna as far as I can tell https://stripe.com/docs/currencies#special-cases
Settlement currency is defined by the country of your stripe account. You can see what currencies accounts from different countries can settle in here. https://stripe.com/docs/payouts#adding-bank-account-information
