I think you answered my question just by providing me with that! It turns out the client is not on the latest Stripe API and the request is properly formatted but it won't work as configured

They're on 2016 and it needs to be 2020 or later — are the risks of upgrading pretty significant? There's no way to test upgrading the API right? I noticed I couldn't just do it from the development side.

I want to be on the latest API but I’m concerned upgrading could break the existing checkout.

I will review the documentation for API upgrades and what objects have changed. Thanks for your help!
