hi! I'd probably do something like set up a cron job on your server that runs once a day and lists Subscriptions and see if any have a current_period_end coming up in the next 7 days, honestly.

yeah I guess that is the easiest way, I was just hoping there would be a way to do it with Stripe, I couldn't set up some sort of schedule that does nothing to the subscription but allows me to trigger the event right?

I suppose that's possible but I wouldn't recommend it, seems error-prone.
