Actually I might have misunderstood the usage of the external payment methods, but I actually want to add a new payment method to the PaymentElement that doesn't do anything : like "Cheque". You can just select it and that's it.

Yeah, no. Payment Element will only surface supported Payment Method Types.

You can't just add a random one.
