One option is to place a hold on the card, and then only capture the funds later if needed. However note that there is a 7 days windows.

Another option is to use Terminal to save the card and not charge anything. Then later make the charge. But that's risky because the charge later may fail of various reasons (not enough funds, card expired, etc.)

By default yes. But you could try to contact Stripe support to see if you are eligible for a longer delay. https://support.stripe.com/contact
