How do you select Canary Island in Checkout? I can't see it here
We are currently utilizing WHMCS. If you consider the latest version, you'll notice that the Canary Islands are included as a country option.

so i guess your question is really, why doesn't Stripe offer Canary Islands as an option in our Country dropdown list?
Not exactly. We do have Canary Islands in our country list. My question is, can Stripe process card payments from customers in the Canary Islands? If so, what should we input as the requested country parameter?
We consider them as part of Spain
So, in essence, do you accept 'ES' as the country code for Spain and not 'IC' for the Canary Islands? In other words, are the Canary Islands not treated as a separate country?
essentially we don't have a way for users to store addresses for Canary Islands customers in a way where they are easily distinguishable from users in Spain
you'll need to use the Spain country code for Canary Island users
if you really want to distinguish them right now, i think the workaround would be to pass that info as metadata
