Sure, you just listen to invoice.created event, and finalize when after you make change to the invoice

It's up you, you can finalize the invoice when you feel it's ready.

How does this work if the invoice is related to a subscription? I believe Stripe tries to automatically attempt payment on that invoice right?

I want the subscription to generate an invoice in "draft" state. After that, I want to edit the invoice and only then finalize it.
