Can you confirm these will be all the transactions of that bank account? and not the transactions that is performed after the attachement of account?

ok. Can you elaborate the first link you shared regarding the legacy integration? I have utilized the plaid api almost one year back and it was a bit of complex task to create account at both stripe and plaid and then connecting the plaid account with the stripe and then we can perform different tasks utilizing apis from both the gateway sometime combined and sometime individulally. Is there any change in the whole process for it as well?

Yes, it's supposed to be much easier now, that you don't need to use Plaid.
