@vale star no we have no API to preview/pre-calculate our fees.
For the second question, it seems related to the first one. This is really up to you. We highly recommend not building your pricing on top of ours. The same way you don't build your pricing on top of the cost of the number of servers you have or emails you send.

For the 4th question, the best option is to use our Destination Charges flow: https://stripe.com/docs/connect/destination-charges (which alleviates the need for what you asked in the 3rd question)

My concern related with N1 and N2 is the fact that is risky and not completely certain that the fee of our platform will be indeed what we expect.
Essentially because in the end will be the difference between the amount that we sent and the amount that you collect as your fees. So for example if I’m receiving a payment for 1k EUR I wont be able to know how much I’ll be earning because I don’t know how would be the exchange rate until the transaction is processed.

Another question related with N4. We have a setup on our account to process the non cross boarder payouts each 7 days. In your experience whats the best approach to handle the cross boarder. For example: Our account is registered on USA and we want to send the funds to a connected account which is located on México, that might be a cross boarder transaction.

Mexico is a bit special and can't be done from the US unless you use https://stripe.com/docs/connect/cross-border-payouts
I'd recommend that you chat with our support team and go over your exact business models and the countries you operate in so that they can guide you to the best/right set up
