Where does that "different data" get used in Stripe?

We want to increase our payment acceptance. Currently we're not providing you ZIP code, billing address, phone number and identification number. However, we do have that data but we don't ask for it in the payment method info. So a customer can give us their phone number and it can be the same that is registered in the bank associated to their payment method or can be not

No I would advise only passing the correct zip code, for example, on a payment method

Passing incorrect billing address data would not help improve your payment acceptance
