I don't know much about Flutter Stripe as it's not officially supported by us. As per App Store Subscriptions, it's managed by Apple and not by Stripe too.
In what context are you planning to use Apple Pay? If it's regarding App Store Subscriptions, it should be available by defualt

Hi, so I've used Stripe before, but just with card. I'm developing my mobile app using Flutter. I don't have much knowledge when it comes to implementing Apple Pay, mainly hooking up apple subscriptions to run through stripe

Apple Subscriptions don't work with Stripe, and are managed by Apple, as I mentioned.

If you're planning to only sell in-app content, you will need to leverage Apple Store Subscriptions, and you might not need Stripe in your app at all.
