Someone wants to sign up for my Costa Rica retreat, they can pay the deposit of $750, but they will need to have some way that they can keep paying the balance that does not involve me doing it manually, but it does tell me what they owe, and when they pay it.

Installment plans allow customers to make partial payments for a set amount of time until the total amount is paid.

Yes it should be possible to do from the Stripe dashboard. Just open your Subscription and click actions > update.
