So if a booking is more than 90days in advanced, then this won't work?
What you can do is to collect the PaymentMethod using SetupIntent and then charge it just before the reservation period and not hold the charge from the begining

No you should use Custom/Express Accounts for SC&T
Otherwise you may have issue for managing funds...

That's the recommendation:

You can still try it but that's not recommended you may be facing issue when doing refunds for example

right ok i will flag that. I think in theory we will hold it for say ... 30 days and then say "no more disputes"

wouldn't the platform holding the funds handle the refunds, instead of the connected account which only receives the funds via SCT only after everything is cleared?
Yes but that's doesn't cover you from getting the funds back if the customer dispute the payment for example
