I'm trying to understand how Stripe detects where a customer comes from so that I can tell that to my accountant/tax adviser.

Is this just IP detection or does Stripe also check in what country a creditcard is registered?

We don't know Launchpass here. But you can use Stripe Tax in general. Here how addresses are used:
