How can I trace back to what product(s) was sold in that session
I have seen this in the docs but I m quite unsure how can I list the products bought in that session?

you can retrieve the checkout session https://stripe.com/docs/api/checkout/sessions/retrieve
using the ID
and then go through the line items data array
and you can see the prices/products
