Do you have cards saved in your GPay wallet?

I am able to see GPay in Chrome on macOS. Are you sure you have cards in your wallet and the wallet is set up correctly?
Maybe you have some settings/plugins that disable the wallets?
Are you able to use it on other websites?
Is it a real card?

Can you try removing and adding a card to GPay again?
If you don't see it on this page then there's nothing you can do in regards to your integration to fix this. The problem is in the browser.
What about Apple Pay?

If it doesn't appear it means it lacks something in the browser set up. It's not an integration issue, but a problem with the browser.

It seems to be PayPal buttons. Are you using PayPal as PSP too?

Just try this and see what happens. I don't undestand why this doesn't work for you so we need to try everything to get a better picture of what's going on.
Ok, as I said, the problem is with the browser/environment, also, given you don't see the GPay in Payment Element.
You could reach out to Google's support and ask why you can't see it in your browser. All Chrome users should see it on https://stripe.com/docs/stripe-js/elements/payment-request-button if their wallets are correctly set up.
