I own the e-commerce, we'd like to add Stripe but just to get payments through Apple/Gooogle pay and bank transfers, not via credit card

Cards and Apple/Google Pay are coupled, since those are effectively card payment methods.

You could potentially achieve this with Express Checkout Element for the wallet options alone, then manage the bank transfer payment method manually (eg, showing transfer instructions).
