Correct - but it says nothing about the connected account seller overriding them! The platform can control them yes but can the seller also?

Can we also add a fee on to the payout?

Okay, so confirmed with a colleague.

1/ Standard accounts without Platform controls can override the schedule and initial payouts manually.

2/ Standard accounts with Platform controls would rely on whatever the platform configures. More on that here: https://stripe.com/docs/connect/platform-controls-for-standard-accounts#control-payout-timing

3/ Express and Custom accounts are controlled by the platform, they can't override the schedules or intiate payouts manually
