Yes that appears to be directly populated from the product name
But I can see how it looks too messy, with large font and everyting trying to be on one line
Unfortunately I don't think there is a way to configure that but I will raise both this and your issue with the checkout text as feature requests, asking us to allow users to specify (or at least style) these blocks of text
