if I want to edit an existing payment method with Payment Element, how do I do that? Does Payment Element prefill existing payment method information?

Or do I have to delete the payment method and add it as a new one

The Payment Element is only for collecting new payment details, not updating an existing Payment Method.

If you want to update an existing Payment Method you can create your own form to collect details (like a new expiration date) and then use the API to make the change.

Another question related to sending receipt through email. What are the ways to send receipt to customer 's email via API? One way I found: https://stripe.com/docs/api/payment_intents/confirm#confirm_payment_intent-receipt_email But I don't see where. I can set the email content/format/template

You can't change the content, format, or template of the emails Stripe sends.

If you want to customize the emails to that degree you would need to turn off Stripe emails and send your own instead.
