but I am only getting as response the last month, but for sure my stripe account has much more events in this type.
Yes, you can list only past 1 month events in the public APIs

https://stripe.com/docs/api/events/list#:~:text=List events%2C going back up to 30 days. Each event data is rendered according to Stripe API version at its creation time%2C specified in event object api_version attribute (not according to your current Stripe API version or Stripe-Version header).

No you can't

#

If you really need to have more than 30 days history, you need to start storing events in your own database and start building your own history of events (more than 30 days)
