Hi, I've created a Session that works fine but I cant finde the Metadat in the Dashboard.

Every object has its own metadata @analog wagon . You added the metadata to the Session so it's only visible there, it won't propagate to the PaymentIntent or the Charge.
What you want is to set https://stripe.com/docs/api/checkout/sessions/create#create_checkout_session-payment_intent_data-metadata instead so that it's added to the PaymentIntent
