I'm just create a standard product like above
(which doesn't seem to be connected to our account in anyway. it's almost as though I'm just able to manage the account of the customer, creating a standard product)
Are you referring to an application fee? Those aren't defined at the product level anyway. Those are defined when you create a payment intent

Another thing, when I use connect with a customer, is it common to have the scope so wide that I can see and manage all of their products? I'm wondering if there is something more restrictive, perhaps so that we only manage items we create?
