Can you clarify a bit more what you're trying to do? Why do you need to specify a billing email that's separate from the email tied to the customer?
Ideally we don't want to show the billing or the customer email on the receipts at all.
But you still want the customer to have an email (just not shown)?
if your goal is only to have an email associated with the customer then you could set it as metadata, but if your actual goal is to still have receipts/invoices emailed to customers (with the email address hidden) then that's not possible (and I believe even with the dashboard billing email field the email would be visisble)
