Not really, there's no way to just lock in a payment method without an option to switching when using Checkout.
What's your usecase?
I am trying to pass the processing fees onto the customer, but if the card is changes... so will the processing fees potentially?

So how do I get around that... any suggestions?
no workaround that I know of when it comes to checkout sessions. We have this support article, it doesn't outline if using a diff card/payment method changes the fees

Oh, I am not sure why they'd suggest that as we know almost nothing about fees. My apologies for the confusion. If chat support is not helpful, I'd recommend writing in via an email instead
