Ok, it's a custom account so by default we won't collect bank details in the hosted onboarding flow unless you turn it on in Dashboard AFAIK
Can you share the parameters you're using when creating the Account Link? I suspect that the hosted flow may only be collecting the currently due requirements: https://stripe.com/docs/connect/custom/hosted-onboarding#info-to-collect
With custom accounts you have more control over the onboarding flow as opposed to standard accounts for example. The recommendation is generally to ensure you have webhooks setup to listen for events to re-trigger onboarding flow when new requirements become due: https://stripe.com/docs/connect/custom/hosted-onboarding#new-reqs-due
