We aren't familiar with the Zapier integration at all so not sure what is being relied on here

I can see there is a "New Payment" trigger, but the data fields available do not include any information about which product was purchased. So I dont want to add a new subscriber to an email sequence if they bought say "pants" instead of "dresses"

Yeah see this is all dependent on what the Zapier integration does when you click "New Payment". We don't control this integration and we didn't build it. So you need to reach out to Zapier about how they can retrieve the data that you are looking for using the Stripe API
