why do you want to omit the country though?

you should be able to omit the country by passing in never for the field you don't want the Payment Element to collect information for https://stripe.com/docs/js/elements_object/create_payment_element#payment_element_create-options-fields-billingDetails

the country is fixed USA because we only accept payments from the US.

Doesn't give a choice to users.

Sorry don't follow. If you specify "never" as Alex said, you won't see it in the UI anymore. Have you tried it?
