If you want to use automatic tax, that is a setting you can use when creating the Payment Link https://stripe.com/docs/api/payment_links/payment_links/create#create_payment_link-automatic_tax-enabled

yes, we have that key in the payment link but when there is more than 1 product the taxes are not applied for the others. For example, there are 3 products and of the 3 only 1 applies to you

In that case you would need to set the tax categories on the product themselves
