Hmmm... I'm not sure why just the once CNAME record wouldn't be working
so when i refresh the bounce record toggles to bounce
and when i hit try verifying it changes to bounce.wedraft.co
like it bounces between the two

Ah, you're problably hitting the third thing we mention here
Make sure the added record names don’t include your domain twice. Some providers automatically append DNS record names with the domain name. For example, to create a record with the name bounce.example.com, enter only bounce in the Name field.
Type: CNAME
Name: bounce
Value: custom-email-domain.stripe.com.
then changes to
Type: CNAME
Name: bounce.wedraft.co
Value: custom-email-domain.stripe.com.
Yeah if you add bounce then your hosting provide probably automatically interprets that as the correct thing
Okay i removed the ( .wedraft.co) on the CNAME and hit verify and it still gave the error
It wouldn't just work immediately though, right? You need to wait for the changes to propagate
and have you spoken to your hosting provider yet just to make sure you're following their expected format?

its strange the other field propagated instantly

Thank you Karbi they did help, i had a duplicate TXT filed with the domain name in the host field and one with the @ and somehow it affected the CNAME validation check on your end
