I just ran some tests from my machine and got a response directly:

okUnable to extract timestamp and signatures from header

But that seems expected given I wasn't actually sending an event payload

My recommendation would be to check that your server/host is allowing connections from our webhook IPs: https://stripe.com/docs/ips#webhook-notifications

Domains and IP addresses

Ensure your integration is always communicating with Stripe.

Could be that some of those IPs are blocked/not permitted which would explain why its intermittent
