Hi 👋 for 1, are you looking to prefill an email you already have for your customer, or are you wanting to set/change the placeholder text for the email field?

For 2, ACH Credit Transfers are considered legacy at this point, and we instead recommend using our newer version of that known as Bank Transfers. The guide here walks through using Bank Transfers in conjunction with the Payment Element:
