Connect is used for marketplace which the platform will create a Standard connected account for the sellers.
Where is money held until the payout if the buyer does not have a stripe account (do they need to create one?)
Buyer/customer doesn't need to have a Stripe account as he/she will make payment using the payment methods like cards, Apple Pay... etc. Seller will need to have a connected account with Stripe.
What happens if you want to cancel that payout because someone cancels an order - can you issue money back to original payment option?
A payment can be refunded to original payment method
Confirming that the user does not refund on stripe fees in that case?
