Why doesn't the mobile version have the BOLETO option ?

Mobile Payment Element doesn't support BOLETO at this moment, I'd forward your feature request to the relevant team

Can you share with me your merchant ID? you can find it from the Stripe Dashboard -> Settings ->Account Details
So that I can include your account details in the request, and we might reach out to you when the Boleto support is added.
