You will need to set the country of your connected account: https://stripe.com/docs/api/accounts/create#create_account-country

It might set the default language too.

But it says that default country is my own country, in this case USA.
So by default it is English. How to keep USA as country and for some users to have the spanish onboarding process ?

Hi! I'm taking over this thread.

In the bottom left of the onboarding page users should be able to change the language with a dropdown (see screenshot below). But that's not something that you can control/change.
I think the default language depends on the browser locale.
